Meatloaf may not be the fanciest of dishes, but it’s perfect comfort food and a hearty, warming meal to serve up to the family at this time of the year.
I have been using the same meatloaf recipe for some time now – it’s something I learned from my mum but have made a few alterations to along the way.
On the weekend, I thought I’d try something slightly different and instead of making one large meatloaf I decided to make each family member their own mini meatloaf. I also wrapped each one in bacon for some extra flavour.
I think the bacon and individual portions adds a little bit of class if you’re planning to serve the meatloaf to guests at a dinner party but also has a cuteness factor for kids who like having their own little meatloaf on their plate.
Personally, I thought it was delicious and it was a big hit with my family – even the kids! – so I thought I would share the recipe with you today.
